Corned beef sandwiches are lunch and snack staples in Jamaica, where they are often called “bully beef sandwiches.” Simple ingredients come together in no time since canned corned beef is already fully cooked to create a delicious, filling, and convenient hand-held meal. Yields: 4 sandwiches
INGREDIENTS:
1 can of Hereford Low-Sodium Corned Beef
2-4 tbsp mayonnaise or mayo substitute of choice
2-4 tbsp ketchup
2 scallions, finely chopped
½ tsp black pepper
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp ground allspice
¼ tsp dried thyme
8 slices of bread of choice (I used Jamaican hard dough bread)
INSTRUCTIONS:
1) Mash the corned beef in a bowl.
2) Add the mayo, ketchup, chopped scallion, and powdered seasonings, and mix to ensure everything is combined well.
3) Spread the corned beef mixture on one slice of bread, then cover it with another slice to form the sandwich. There should be enough to make four sandwiches.
