Grater Cake
INGREDIENTS:
3 cups grated coconut, packed (approx. 3 coconuts)
2 cups granulated sugar
¼ cup water
1 tsp ginger paste
Pinch of salt
Few drops of natural red food coloring
INSTRUCTIONS:
1) Lightly grease an 9x9 baking dish.
2) Extract the meat from the coconuts, and scrape off the seed coat. Rinse well.
3) Use a box grater or food processor to grade the coconut meat.
4) In a large, heavy-bottomed pot over medium heat, add the granulated sugar, water, ginger paste, and a pinch of salt. Stir frequently to prevent the sugar from burning.
5) Once the sugar starts to bubble aggressively and reduces by about half, reduce the heat to low and allow it to further thicken into a syrup.
6) Add the grated coconut, and incorporate everything well. Continue to stir until the liquid is absorbed.
7) Evenly spread two-thirds of the mixture in the prepared baking dish.
8) Add a few drops of natural red food coloring to the remaining mixture and stir well to make it pink.
9) Evenly spread the now pink mixture over the first layer.
10) Allow it to cool completely before enjoying.
