Salmon Cakes
INGREDIENTS:
1 14.5 oz can salmon, drained, bones removed
1/4 onion, fine diced
1 minced garlic clove
1 scallion stalk, chopped (save green part for garnish)
1/4 each red, green, yellow bell pepper, fine diced
Leaves of 2 thyme sprigs
1/2 tsp old bay seasoning
1/2 tsp lemon pepper seasoning
1 egg, beaten
1/4 cup all-purpose flour
Neutral oil for frying (like vegetable or canola) – enough to full coat the bottom of a pan
INSTRUCTIONS:
1) To a bowl, add the salmon. Mash, then mix in the onion, garlic, scallion, bell peppers, thyme, and seasoning.
2) Incorporate one beaten egg and flour a little at a time until everything binds together well enough to form into patties.
3) Heat neutral oil to a frying pan or skillet on medium heat. Fry the salmon cakes until golden brown (approximately 3-4 minutes per side).
