Dukunoo aka Blue Draws or Tie-A-Leaf
INGREDIENTS:
4 cups grated Caribbean sweet potato (boniato)
1 cup grated cassava (or green bananas)
1 cup coconut flakes
1.2 cup fine cornmeal
½ cup all-purpose flour
1 cup brown sugar
1 tsp cinnamon
1 tsp nutmeg
½ tsp ground ginger
½ tsp salt
1 tbsp vanilla extract
½ tbsp rose water
2 cups coconut milk
Banana leaves
INSTRUCTIONS:
1) Grate boniato and cassava.
2) Place grated boniato and cassava into a bowl along with coconut flakes. Add cinnamon, nutmeg, ground ginger, salt, vanilla extract, and rosewater. Mix well.
3) Stir in coconut milk and brown sugar. Add cornmeal and flour.
4) Cut banana leaves into rectangles that will be used to create little packages with the mixture. Make them more malleable by blanching or steaming over hot fire for a few seconds.
5) Wrap scoops of the mixture in the banana leaves, then tie with kitchen twine.
6) Boil/steam the “packages” for about 45 minutes.
