Rock Buns/Rock Cakes

INGREDIENTS:

 

1 cup all-purpose flour

1 tsp baking powder

½ tsp salt

¼ tsp cinnamon

¼ tsp nutmeg

2 tbsp cold butter, diced

4 tbsp sugar

½ cup unsweetened coconut flakes (optional)

1 egg

2 tbsp milk

1 tsp vanilla

2 tbsp raisins (optional)

 

 

INSTRUCTIONS:

 

1) Preheat oven to 400 degrees Fahrenheit. Sift the flour, baking powder, salt, cinnamon, and nutmeg into a bowl.

 

2) Add the butter, and use your hands to work the butter into the flour mixture until the texture becomes like pebbly sand.

 

3) Mix in the sugar and coconut flakes (if using) until well incorporated.

 

4) Beat the egg, milk, and vanilla together; add gradually to the flour mixture, and work it in with your hands or a spatula until a stiff, shaggy dough forms. Add raisins (if using).

 

5) Place about 6 portions of the dough on a lightly greased baking sheet (or pan lined with parchment paper). Bake for 15 minutes or until light golden brown.

 

 

Enjoy as a nice snack or with tea!
