Peanut Porridge
INGREDIENTS:
1 cup raw peanuts
½ cup plain oats
1.5 cups evaporated milk
1.5 cups water
1.5 cups coconut milk
2 cinnamon sticks (or 1/2 tsp ground cinnamon)
½ tsp grated or ground nutmeg
¼ tsp ground allspice
1 tsp vanilla extract
1 tsp rose water
Pinch salt
Sweetened condensed milk (to taste)
INSTRUCTIONS:
1) Pour peanuts, oats, and evaporated milk into a blender. Blend until smooth.
2) Bring water and coconut milk to a boil in a medium pot with cinnamon sticks. (If using ground cinnamon, add later.)
3) Pour peanut mixture into the pot while whisking vigorously to prevent lumps. When everything is well incorporated, reduce the heat to medium-low, cover and allow to cook for 10 minutes.
4) Reduce the heat to low. Stir the porridge well. Add nutmeg, (ground cinnamon if using instead of cinnamon sticks), allspice, vanilla, rose water, and salt. Stir well.
5) Sweeten to taste with condensed milk.
