Guinness Stout Ice Cream
INGREDIENTS:
1 bottle Guinness Extra Stout
¼ tsp ground cinnamon – optional
¼ tsp ground nutmeg – optional
2 cups cold heavy cream
1 14-oz can sweetened condensed milk
1 tbsp vanilla extract
1 pinch salt (approx. 1/16 tsp)
INSTRUCTIONS:
1) In a saucepan over medium heat, bring Guinness Stout to a rolling simmer for about 15-20 minutes, stirring often until reduced to about ¼ cup. Stir in the cinnamon and nutmeg if using. Remove from the heat and allow to cool.
2) In a cold metal bowl, whisk cold heavy cream (on a medium-high setting if using a hand mixer), until semi-stiff peaks form. During this process, mix in the vanilla as well.
3) Gently fold in the condensed milk followed by the reduced Guinness and pinch of salt until everything is well incorporated.
4) Once smooth, pour the mixture into a chilled loaf pan. Cover with plastic wrap, and set in the freezer for at least 4-6 hours before serving.
