Pepper Shrimp
INGREDIENTS:
1 lb shrimp (heads-on, shells-on, according to preference), deveined and cleaned
1/2 tsp salt
1/2 tsp black pepper
1 tsp seafood seasoning
3 scallions, chopped (green part reserved)
3 garlic cloves, sliced thin
1-2 scotch bonnet peppers, chopped
1 tbsp avocado oil
1 stick (8 tbsp) unsalted butter (or less, according to preference)
1/2 tsp scotch bonnet seasoning
1/2 tsp bijol for color (optional) or use annatto
1 tbsp white vinegar
INSTRUCTIONS:
1) Season deveined and cleaned shrimp with salt, black pepper, and seafood seasoning.
2) To a hot skillet over medium heat, add the oil and butter.
3) Once the butter melts, add the scallion, garlic, and scotch bonnet, and scotch bonnet seasoning to the pan and sauté for 1 minute.
4) Add the seasoned shrimp to the pan, then try to spread them out into an even layer as much as possible.
5) After 2 minutes of cooking, flip the shrimp and cook for another 1-2 minutes, ensuring they do not overcook.
6) Add the bijol, annatto, or optional food coloring of choice to the shrimp and the vinegar, then gently toss the shrimp in pan for a minute so they are evenly coated with the sauce and color.
Garnish with scallion and enjoy!
