INGREDIENTS:
1 lb lean ground beef
½ onion, diced small
2 large garlic cloves, minced
¼ cup diced tri-color bell peppers
1 tsp cilantro, finely chopped (optional)
½ tsp garlic powder
½ tsp onion powder
¼ tsp smoked paprika
¼ tsp chili powder
¼ tsp ground cumin
½ tsp dried oregano
½ tsp salt (or to taste)
¼ tsp black pepper (or to taste)
Few tbsp vegetable oil
10 taco-sized tortillas
Mozzarella cheese
Cheddar or Colby Jack cheese
INSTRUCTIONS:
1) Sauté prepared vegetables in 1 tbsp oil on medium heat for two minutes. Add ground beef and mince in the pan, mixing well with the vegetables, until brown. Add the powdered seasonings. Once fully cooked (about 8 minutes), set aside.
2) In a separate pan, add 1-2 tbsp of olive oil on medium heat. Lightly fry the tortillas on one side, then flip and build the tacos. Add a layer of both cheeses, then add the cooked beef, then another layer of cheeses, then close the tacos. Make sure the tacos are golden brown on both sides once closed.
Serve with pico de gallo and/or sour cream. Enjoy!
