INGREDIENTS:
2.5-3 lb rack of ribs such as St. Louis country-style spare ribs or baby back ribs
Mix together the dry rub with:
1/4 cup brown sugar
2 tsp garlic powder
2 tsp onion powder
2 tsp chili powder
2 tsp smoked paprika
1 tsp dry mustard powder
1 tsp dried oregano
1 tsp kosher salt
1 tsp black pepper
Also: Your favorite BBQ sauce
INSTRUCTIONS:
1) Preheat oven to 325 degrees.
2) Remove the membrane from the rack of ribs. Clean the ribs (a couple lemons or limes and a water rinse should be good). Pat dry the ribs with a paper towel.
3) Drizzle the ribs very lightly with oil, then smother all over with the rub. Place them in a foil-lined baking pan bone side down and cover tightly with foil.
4) Bake the ribs at 325 degrees for 2.5 hours. (If they’re not yet easy to come off the bone with the stab of a fork, then put back in the oven for another 15-30 minutes.)
5) When the ribs are tender, increase your oven temp to 375 degrees. Drain the liquid from the pan. Smother the cooked ribs with your favorite store-bought or homemade BBQ sauce according to your taste - sweet, spicy, mild, whatever you like. (I use Sweet Baby Ray’s Original.)
6) Put the ribs back in the oven uncovered for 15 minutes.
7) Remove the ribs from the oven, add more BBQ sauce, and serve!
