Jamaican Banana Fritters Recipe

Banana fritters are a sweet, fried treat made with overripe bananas and cooked until golden and crisp around the edges. This easy Jamaican breakfast staple is also great as an afternoon snack or whenever you need a quick way to use up ripe bananas.

Ingredients

  • 4 overripe bananas
  • 4 tbsp light brown sugar or to taste
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour plus 1-2 tbsp, if needed, for the right consistency
  • 1 tsp baking powder
  • Dash of salt approx. 1/8 tsp
  • Neutral high-heat oil for frying
  • Powdered sugar for sprinkling – optional

Instructions

  • In a bowl, mash the bananas until semi-smooth. Some lumps are OK.
  • Add the sugar, cinnamon, nutmeg, vanilla, all-purpose flour, baking powder, and dash of salt to the mashed bananas, and mix until well combined. The mixture should be thicker than pancake batter – pourable, but better handled with a spoon. Note: Water should not be necessary to add at this point, but if you feel the batter is too thick, add a tsp of water at a time and mix until it reaches your desired consistency. If you feel the batter is too thin, add a tsp of flour at a time until it reaches your desired consistency.
  • Heat about 4 tbsp of oil in a frying pan up to between 350 and 375 degrees Fahrenheit. Scoop spoonfuls of the batter into the pan without crowding. Fry for about 2 minutes on each side or until golden brown. Set on a wire rack to cool.
  • Yields about 16 fritters. Serve with a sprinkle of powdered sugar, if desired.
