Equipment

  • Cutting Board
  • Knife
  • Large skillet or sauté pan with lid
  • Wooden spoon or spatula
  • Tongs

Ingredients

  • 1 small cabbage sliced thin (core removed)
  • 1 large carrot cut into matchsticks
  • 1/2 yellow onion diced
  • 1/2 green bell pepper julienned
  • 1/2 red bell pepper julienned
  • 4 garlic cloves minced
  • 1 scallion stalk chopped
  • 4 allspice berries crushed
  • 1/2 medium yellow onion chopped
  • 1 tbsp cooking oil (such as avocado or coconut oil for added flavor)
  • 1 tbsp all-purpose seasoning
  • 2 thyme sprigs
  • 1 scotch bonnet pepper whole
  • 1/4 cup water

Instructions

  • Add oil to a medium-sized pot or pan over medium-low heat. Lightly sauté the onion for 30 seconds. Add the bell peppers, and sauté for an additional 30 seconds. Then, add the minced garlic, scallion, and crushed allspice berries, and sauté for another 30 seconds or until fragrant.
  • Sprinkle in the all-purpose seasoning, then add the cut carrots and cabbage to the pot. Mix until well incorporated and the cabbage begins to soften (about 2 minutes).
  • Reduce the heat to low. Add the water, thyme sprig, and scotch bonnet pepper. Cover and allow the cabbage to steam for 5-7 minutes or until it reaches your desired tenderness.

Notes

Another great side dish to go along with steamed cabbage is fried ripe plantain. Enjoy!
