3 cups all-purpose flour

1 tbsp baking powder

3/4 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

8 tbsp (1 stick) salted butter, softened 

1 cup granulated sugar

1/2 cup dark brown sugar (less if you prefer)

2 tsp vanilla extract

2 eggs, beaten

1 13.5 fl oz can coconut milk (approx. 1.7 cups)

1 cup grated coconut or coconut flakes (more if you like)

Optional: 2 tbsp rum, ½ cup raisins





1) Preheat oven to 350 degrees Fahrenheit. Sift the flour, baking powder, salt, cinnamon, and nutmeg into a bowl.


2) In a separate bowl, combine the butter, sugar, vanilla extract, and eggs. Once smooth, mix in the coconut milk.


3) Gradually combine the dry mixture into the wet mixture. Mix until well incorporated, but don’t over mix. A few small lumps are OK.


4) Pour the mixture into a 9x9 baking dish sprayed with nonstick baking spray and bake for 40 minutes or until it passes the clean knife test.
