INGREDIENTS:
2.5 cups all-purpose flour
1 tsp baking powder
3/4 tsp salt
3/4 tsp black pepper
1 cup twice-boiled saltfish, deboned and picked apart into small pieces
1/2 onion, chopped
1 stalk scallion, chopped
2 garlic cloves, minced
Chopped sweet peppers (three different colors, 1/3 of each)
1/3 chopped scotch bonnet (no seeds)
2 cups of water (more or less - pour a little at a time and work it in until the batter reaches desired consistency)
Vegetable oil for frying
INSTRUCTIONS:
Scoop blobs of the batter into hot oil (medium-high heat), and fry about 6-8 minutes on each side until fritters are golden. Should make about 12 fritters.
*Note: You can sauté the fresh seasonings before adding to the batter befire frying if you’d like. Totally up to you!
