INGREDIENTS:
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt - optional
1 tsp black pepper
1 lb twice-boiled saltfish, deboned and picked apart into small pieces
1/2 onion, chopped
2 garlic cloves, minced
1 stalk scallion, chopped
Leaves of 1 thyme spring
1/2 chopped scotch bonnet (no seeds)
Chopped sweet peppers (three different colors, 1/3 of each) - optional
1/2 tomato, chopped - optional
1 cup of water (more or less - pour a little at a time and work it in until the batter reaches desired consistency)
Vegetable oil for frying
INSTRUCTIONS:
Scoop blobs of the batter into hot oil (medium heat), and fry about 4 minutes on each side or until fritters are golden. Should make about 10-12 fritters.
*Note: You can sauté the fresh seasonings before adding to the batter before frying if you’d like. Totally up to you!
