Easy Chili
INGREDIENTS:
2 lbs ground meat (beef, chicken, turkey, or pork)
1 yellow onion, diced
4 garlic cloves, minced
1 green bell pepper, diced
1 jalapeño pepper, diced (remove seeds if desired)
2 tsp chili powder
2 tsp taco seasoning*
1 tsp all-purpose seasoning
1 tsp salt (or to taste)
1/2 tsp black pepper (or to taste)
1/2 tsp red chili flakes (optional, to taste)
1 tbsp tomato paste
1 tbsp Italian herb paste (optional)
1-15.5 oz can red kidney beans
1-14.5 oz can diced tomatoes
1-14.5 oz can crushed tomatoes
1 cup broth (beef or chicken)
1/4 cup Red Stripe beer (or opt to use another 1/4 cup broth)
*Homemade Taco Seasoning (save and store for future use):
2 tbsp garlic powder
2 tbsp onion powder
1.5 tbsp smoked paprika
1.5 tbsp chili powder
1.5 tbsp ground cumin
1.5 tbsp kosher salt
1 tbsp black pepper
1 tbsp dried oregano
INSTRUCTIONS:
1) Brown the ground meat for 6-8 minutes in large pot on medium-high heat with a couple tbsp cooking oil.
2) Reduce the heat to medium, drain the excess liquid, then season the meat with the chili powder, taco seasoning, all-purpose, salt, black pepper, and chili flakes.
3) Add in the onion, garlic, bell pepper, and jalapeño, stir, and continue to cook until the vegetables soften.
4) Stir in the tomato paste and herb paste. Then, add the red kidney beans, diced tomatoes, and crushed tomatoes, and stir.
5) Add the broth and beer, and bring to a rolling simmer.
6) Reduce the heat to low, and simmer for one hour or until the chili reduces to your desired consistency.
Serve with rice or cornbread. Garnishes with sour cream, shredded cheese, and/or chopped cilantro.
