Creamy Tuscan Chicken Over Spaghetti

Creamy Tuscan Chicken over Spaghetti

 

INGREDIENTS:

 

Chicken:

2 lbs boneless, skinless chicken thighs

1 tsp salt

½ tsp black pepper

1.5 tsp Italian seasoning

1.5 tsp smoked paprika

 

Seasoned Flour:

1 cup all-purpose flour

1 tsp salt

1 tsp black pepper

1.5 tsp onion powder

1.5 tsp garlic powder

1 tsp chili powder

 

Creamy Tuscan Sauce:

1 tbsp olive oil

3 tbsp butter

½ yellow onion, chopped

4 garlic cloves, minced

~12 grape tomatoes, halved

~2 handfuls of spinach, roughly chopped

1.5 tsp basil paste

1.5 tsp tomato paste

2 tbsp sun-dried tomatoes

1 tsp red chili flakes (optional)

¼ cup dry white wine or chicken broth

Juice of ½ lemon

2 cups heavy cream

1 cup shredded parmesan and mozzarella cheese (+ more for topping)

Salt, pepper & other seasonings of choice to taste

 

 

INSTRUCTIONS:

 

1) Season clean chicken with salt, black pepper, Italian seasoning, and smoked paprika. Massage well.

 

2) Season the flour with salt, black pepper, onion powder, garlic powder, and smoked chili powder. Mix well.

 

3) Coat the chicken thoroughly with the seasoned flour, then set aside for 10 minutes while you prep the veggies for the cream sauce.

 

4) In a pan on medium to medium-high heat, add the olive oil and butter. Pan sear the chicken for 3-5 minutes on each side, then remove it from the pan.

 

5) Lower the heat to medium, then in the same pan, sauté the onion and garlic for about a minute or until fragrant. Add the basil paste, tomato paste, and sun-dried tomatoes. Combine well.

 

6) Deglaze the pan with ¼ cup of dry white wine or chicken broth. Add the juice of ½ lemon, and allow to reduce.

 

7) Add the grape tomatoes and stir in the heavy cream. Season to taste with salt, pepper, and any other seasonings you choose while the sauce comes up to a simmer and begins to reduce.

 

8) When the sauce begins to thicken, lower the heat once more. Stir in the spinach and cheeses.

 

9) Add the chicken back to the pan with the sauce. Simmer on low for 5 minutes.

 

10) Cover the chicken with the cream sauce and top with more cheese.

 

 

Serve over spaghetti or your favorite pasta. Enjoy!
