Coconut White Rum Grapenut Ice Cream
INGREDIENTS:
1.5 cups cold heavy cream
1 cup cold unsweetened coconut cream (liquid removed)
1 14 oz can sweetened condensed milk
1 tbsp vanilla extract
1 pinch salt (approx. 1/16 tsp)
¾ cup grape-nut cereal
1 tbsp white rum – optional
INSTRUCTIONS:
1) Add the heavy cream to a bowl and whisk on medium speed until it starts to thicken.
2) Add the vanilla extract and coconut extract, then whisk again until soft peaks form.
3) Add the cream from a can of unsweetened coconut cream that has been chilled and discard the liquid that will remain at the bottom of the can. Whisk until well combined.
4) Pour in the sweetened condensed milk. Stir until well combined and smooth.
5) Add a pinch of salt, and give it a final whisk on low speed.
6) Add in the grapenut cereal and the rum (optional).
7) Stir to incorporate everything well. Pour the mixture into a chilled metal loaf pan.
8) Cover with plastic wrap, and set in the freezer to chill for at least 6 hours.
