Banana Fritters
INGREDIENTS:
2 overripe bananas
2 tbsp light brown sugar (or to taste)
¼ tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp vanilla extract
½ cup all-purpose flour (plus 1-2 tbsp if needed for the right consistency)
½ tsp baking powder
Small dash of salt
Powdered sugar for sprinkling – optional
Neutral high-heat frying oil
INSTRUCTIONS:
1) In a bowl, mash the bananas until semi-smooth. Some lumps are OK.
2) Add the sugar, cinnamon, nutmeg, vanilla, all-purpose flour, and dash of salt to the mashed bananas, and mix until well combined. The mixture should be thicker than pancake batter – pourable, but better handled with a spoon. (Water should not be necessary to add at this point, but if you feel the batter is too thick, add a tsp of water at a time and mix until it reaches your desired consistency.)
3) Heat about 4 tbsp of oil in a frying pan up to between 350 and 375 degrees Fahrenheit. Scoop spoonfuls of the batter into the pan without crowding. Fry for about 2 minutes on each side or until golden brown. Set on a wire rack to cool.
4) Sprinkle with powdered sugar (optional).
Makes 8 fritters. Enjoy!
