INGREDIENTS:
Chicken:
4 lbs chicken pieces (I used legs, thighs, and back)
1 tbsp all-purpose or chicken seasoning
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
½ tsp ground allspice
½ tsp seasoned salt (or to taste)
½ tsp black pepper (or to taste)
1.5 tsp garlic paste
1.5 tsp ginger paste
1 scallion, chopped
Few thyme sprigs
1 tbsp Pickapeppa gingery mango sauce
1 tbsp Fish & Meat sauce
Glaze sauce:
½ cup BBQ sauce
¼ cup sweet chili sauce
1 tbsp Pickapeppa gingery mango sauce
1 tbsp Worcestershire sauce
2 tbsp reserved liquid from the chicken
INSTRUCTIONS:
1) Clean, season, then marinate the chicken for at least 1 hour with all of the chicken ingredients listed.
2) Bake at 375 degrees Fahrenheit for 45 minutes.
3) Drain and reserve the liquid from the pan. Make the glaze with all of the glaze ingredients listed. Use half of the glaze sauce mixture to glaze the chicken. Bake for another 45 minutes.
4) Glaze the chicken again with the remaining sauce, then broil for 5 minutes.
Serve with rice & peas or mac & cheese with vegetable side of choice. Enjoy!
