Caribbean Cornmeal Porridge

Cornmeal porridge and fried dumplings carry so many childhood memories for me. This is an easy Caribbean breakfast staple I often crave. It’s one of my favorite ways to ease into the morning.

Why you’ll love this Cornmeal Porridge Recipe

  • Comfort Meal: Warm, smooth cornmeal porridge that’s filling and satisfying, especially first thing in the morning.
  • Great Flavor: Infused with vanilla and cinnamon for that classic, cozy taste you expect.
  • Easy to Customize: Swap in coconut milk or your preferred milk and adjust the sweeteners, whether that’s condensed milk or something lighter.

How healthy is cornmeal porridge?

Cornmeal porridge can be a nourishing option, depending on how it’s prepared. It provides carbohydrates for energy and can be a good source of vitamins and minerals, especially when made with milk. The overall healthfulness will vary based on the type of milk and sweetener used, so those can be adjusted to fit your preferences.

ingredients for Jamaican cornmeal Porridge

  • Milk of choice: I like using evaporated milk for a richer taste, but coconut milk makes it extra creamy and adds a subtle sweetness.
  • Fine cornmeal: This gives the porridge its smooth texture, so I always go for finely ground cornmeal to avoid any grittiness.
  • Water: I mix this with the cornmeal first to help it blend smoothly into the milk without clumping.
  • Ground spices: Cinnamon brings that warm, familiar flavor, nutmeg adds depth, and allspice ties everything together with a well-rounded spice blend.
  • Vanilla extract: I add this at the end for a soft sweetness that complements the spices.
  • Rose water (optional): I use this when I want a light floral note that makes the porridge feel extra special.
  • Sweetener of choice: I usually go with condensed milk for that classic taste, but brown sugar works great if you want something a bit lighter.

How to make Cornmeal Porridge

Warm the Milk

I start by warming the milk in a small pot over medium heat until it begins to steam, making sure it doesn’t boil. This step sets the base for a smooth porridge.

Mix the Cornmeal

While the milk warms, I mix the cornmeal with water in a separate bowl. This helps it blend easily into the milk without forming lumps.

Cook the Porridge

Once the milk is warm, I slowly stir in the cornmeal mixture, stirring almost constantly as it begins to thicken. As soon as it starts to come together, I lower the heat to medium-low to keep it from sticking or clumping.

Add Flavor

When the porridge reaches a gentle boil, I reduce the heat to low and stir in the cinnamon, nutmeg, allspice, vanilla, and rose water if I’m using it. I taste and adjust the spices as needed.

Sweeten your cornmeal porridge

I turn off the heat and stir in my sweetener of choice until it’s just right. If the porridge feels too thick, I add a little more milk to loosen it before serving.

storage

Store leftover cornmeal porridge in an airtight container in the fridge for up to 3 days. When you’re ready to reheat, warm it on the stovetop or in the microwave, adding a splash of milk or water to loosen it as it thickens. Stir well as it heats to bring back that smooth consistency.

Tips for the best Jamaican Cornmeal Porridge

  • Mix the cornmeal with water first. This helps prevent lumps and makes it easier to incorporate into the warm milk smoothly.
  • Warm the milk without boiling. Keeping the milk just below a boil helps control the texture and prevents the porridge from cooking too quickly.
  • Stir frequently as it thickens. Regular stirring keeps the porridge smooth and stops it from sticking to the bottom of the pot.
  • Lower the heat as it cooks. Once it starts to thicken, reducing the heat helps it cook evenly without clumping.
  • Add spices after it begins to boil. This allows the flavors to infuse without dulling their aroma or taste.

recipe variations

  • Make it dairy-free. Use coconut milk, almond milk, or oat milk in place of dairy, and pair it with a sweetener like brown sugar or maple syrup to keep everything plant-based.
  • Switch up the sweetness. Condensed milk gives a classic finish, but brown sugar, honey, or maple syrup all work depending on how rich or light you want it.
  • Add fresh fruit. Sliced bananas, berries, or even mango bring a natural sweetness and a bit of texture that pairs really well with the warm porridge.
  • Boost the flavor. Try adding a pinch of ginger or a splash of almond extract for a slightly different flavor profile without changing the base of the recipe.

frequently asked questions

Can I adjust the thickness of cornmeal porridge?

Yes, you can easily adjust the consistency at the end. If it’s too thick, stir in a splash of milk until it reaches your preferred texture.

Do I need to use fine cornmeal for this recipe?

Yes, fine cornmeal works best for a smooth porridge. Coarse cornmeal can result in a more grainy texture, which isn’t typical for Jamaican cornmeal porridge.

Why is my porridge turning out lumpy?

Lumps usually happen when the cornmeal is added too quickly or not stirred enough. Mixing it with water first and stirring consistently as it cooks helps keep the texture smooth.

What can I serve with cornmeal porridge?

Cornmeal porridge pairs really well with savory sides to balance the sweetness. Try it with fried dumplings, Jamaican water crackers, or saltfish fritters for a more complete breakfast.
