How to make Jamaican Jamaican Toto
Prepare the Dry ingredients

Mix the Wet ingredients
In a separate bowl, whisk the softened butter and brown sugar together. Add the eggs and whisk until combined, then stir in the vanilla extract and coconut milk.

- Distribute the coconut evenly. Fold the coconut in gently so it is spread throughout the batter instead of concentrated in one area.
- Keep an eye on the baking time. Ovens can vary, so start checking the cake toward the end of the suggested baking time. The top should be golden and a knife inserted in the center should come out clean.
- Let it cool before cutting. Toto is easier to slice once it has had a chance to cool and settle.

- Use freshly grated coconut. Another benefit of making fresh coconut milk is the option to use the leftover freshly grated coconut which gives the cake texture and a more pronounced coconut flavor.
- Add a little rum. A small splash of Jamaican rum can add another layer of flavor if you’d like to give your toto a little extra character.

Once cooled, store toto in an airtight container at room temperature for up to two days. For longer storage, refrigerate it in an airtight container and bring it room temperature or warm slices in the microwave for 10-15 seconds before serving.

- 1 tbsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon

- 2 large eggs
- 2 cups coconut milk
