These fried chicken wings are seasoned with a quick marinade that builds flavor fast without extra wait time. Deep fried until golden and crispy, this recipe gives you a crunchy coating with tender, juicy chicken in every bite.

Crispy Fried Chicken Wings
My deep fried chicken wings start with a quick marinade that actually clings to the meat, so each piece is seasoned all the way through. The oil gets infused with garlic and scotch bonnet as they fry, adding another layer you don’t usually get with standard fried chicken. The seasoned flour with cornstarch and a short rest on the rack helps create a crisp coating that holds up. Once they hit the table, don’t expect leftovers, because these get devoured fast.
Why you’ll love These Deep Fried Chicken Wings
- Perfect for Game Day: Crispy, shareable, and easy to make in batches so everyone gets a fresh, hot wing.
- Caribbean Twist: Green seasoning and scotch bonnet pepper bring that distinct island flavor.
- Easy Recipe: A quick marinade and simple dredge keep the process simple enough for beginners.
ingredients
for the Chicken
- Chicken Wings: I use whole chicken wings here, so each piece gives you both the meaty drumette and the flat. They fry up with plenty of surface area for that crisp coating.
- Green Seasoning: This is the base of the flavor in this recipe. I use a blend of fresh herbs, garlic, and aromatics that soak into the chicken and season it all the way through. If you don’t already have some on hand, you can make my homemade green seasoning.
- Sazon (with annatto): Adds color and a subtle depth that makes the wings stand out once fried.
- Chicken Seasoning: Layers in that savory flavor so the chicken doesn’t taste flat.
- Onion Powder: Gives a mellow, slightly sweet depth that rounds everything out.
- Garlic Powder: Builds on the garlic flavor without overpowering the fresh garlic used later.
- Smoked Paprika: Adds a light smokiness that comes through even after frying.
- Eggs: Help the marinade cling to the chicken so the coating sticks better.
- Hot Sauce: Brings a little heat and helps wake up all the other flavors.
For the Seasoned Flour
- All-Purpose Flour: The base for the coating that crisps up in the oil.
- Cornstarch: This is key for that light, crisp texture that holds up after frying.
- Baking Powder: Helps create a slightly airy, craggy coating.
- Chicken Seasoning: Reinforces the flavor so the crust isn’t bland.
- Onion Powder: Adds depth to the coating so every bite is seasoned.
- Garlic Powder: Keeps that garlic flavor consistent from the marinade to the crust.
- Smoked Paprika: Brings color and a subtle smoky note to the coating.
- Salt: Balances everything and sharpens the flavor.
- Black Pepper: Adds a mild heat that complements the seasoning.
Additional
- Neutral High-Heat Oil: I use something like vegetable or canola so it doesn’t interfere with the flavor.
- Garlic Cloves: Infuse the oil as the wings fry for another layer of flavor.
- Scotch Bonnet Pepper: Adds heat and that distinct island flavor right into the oil.
How to Fry Chicken Wings
Clean and Prep the Chicken
I start by cleaning the chicken wings with lime, vinegar, and water, then pat them dry really well. This helps remove any residue and gives me a clean base to work with. Drying them properly also helps the seasoning stick better.
Season and Marinate
I add the green seasoning, sazon, chicken seasoning, onion powder, garlic powder, smoked paprika, eggs, and hot sauce right to the chicken. Then I massage everything in so it fully coats each piece. I let it sit for about 15 to 20 minutes so the flavor can soak into the meat.
Prepare the Seasoned Flour
In a separate bowl, I whisk together the flour, cornstarch, baking powder, chicken seasoning, onion powder, garlic powder, smoked paprika, salt, and black pepper. This mixture is what gives the wings that crisp coating. I make sure everything is evenly combined so every piece gets the same flavor.
Coat the Chicken
I drop each wing into the seasoned flour and press the coating onto the surface so it sticks well. After shaking off any excess, I place the wings on a wire rack. I let them rest for about 10 minutes so the coating sets before frying.
Heat the Oil
I fill a large Dutch oven about halfway with neutral oil and heat it to 365°F. Once it’s hot, I add garlic cloves and a scotch bonnet pepper to infuse the oil with extra flavor. I work in batches so I don’t overcrowd the pot when I fry chicken wings.
How Long to Deep-Fry Chicken Wings
I fry the wings for about 10 to 12 minutes, turning them halfway through so they cook evenly. I’m looking for a deep golden color and making sure the thickest part reaches at least 165°F. If needed, I let them go another minute to be sure they’re fully cooked.

Rest and Serve
I transfer the wings to a wire rack once they’re done. Letting them rest for about 10 minutes helps the coating stay crisp. After that, they’re ready to serve while still hot.
storage
I let the wings cool completely before storing so they don’t steam and lose that crisp coating. Then I transfer them to an airtight container and keep them in the fridge for up to 3 to 4 days.
Reheat: To reheat in the oven, place the wings on a wire rack over a baking sheet. Then warm them at 350°F for about 10 to 15 minutes until heated through and crisp again. For the air fryer, reheat them at 375°F for about 5 to 7 minutes, checking halfway through so they don’t overcook.
Tips for Making Deep Fried Chicken Wings
- Dry the chicken well. After cleaning, I pat the wings completely dry so the seasoning sticks and the coating fries up properly.
- Press the coating onto the chicken. I make sure to really press the flour mixture on so it forms that textured crust and doesn’t fall off while frying.
- Let the coated wings rest. Giving them about 10 minutes on a wire rack helps the coating set and hold up in the oil.
- Keep the oil at 365°F. This helps the wings cook through while getting that crisp exterior without absorbing too much oil.
frequently asked questions
Yes, coating the wings in seasoned flour helps create that crisp outer layer once they hit the oil. In this recipe, the eggs in the marinade help the flour stick, so you get an even, textured coating on every piece.
It comes down to a few key steps. Keeping the oil at 365°F, letting the coating rest before frying, and working in batches all help the wings cook evenly and stay crisp.
Frying too many wings at once drops the oil temperature. That can lead to soggy coating instead of a crisp finish.

- 1/2 tsp black pepper
Additional
- Neutral high-heat cooking oil
- 4 garlic cloves
- 1 scotch bonnet pepper
Instructions
- Clean the chicken wings with lime, vinegar, and water, then pat dry.
- Season with 2 tbsp green seasoning, 1.5 tsp sazon, 1 tbsp chicken seasoning, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp smoked paprika, 2 eggs, 2 tsp hot sauce. Massage well, then set aside to marinate for 15-20 minutes.
- In a separate bowl, whisk together 2 cups all-purpose flour, 4 tbsp cornstarch, 1.5 tsp chicken seasoning, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp smoked paprika, 1 tsp salt, 1/2 tsp black pepper.
- Drop the chicken wings into the seasoned flour, one at a time, and press it onto the chicken until well coated. Shake off any excess flour, then set each wing on a wire rack for 10 minutes before frying.
- Fill a large dutch oven pot up half way with neutral, high-heat oil. Heat oil up to 365 degrees F. Fry the chicken in batches so as not to overcrowd the pot. Flip halfway through, and fry for a total of about 12 minutes depending on the size of the chicken wings. Once the wings are golden brown and the thickest part reaches at least 165 degrees F, it’s cooked. (Another way to check without a meat thermometer is if the chicken is pricked with a fork and the juices run clear, they should be ready. Fry for another minute for good measure.)
- Rest on a wire rack for 10 minutes before serving.
